Thin slices cut by machine or sliced ??by knife by a master cutter of the hind limb from our own 100% Iberian pigs selected from birth.

They spend the first stage of their life on our farm , feeding on natural cereals produced in our facilities until they reach a weight of between 40 and 50 kg, when they enter the pastures.

There they enjoy an exquisite diet made up of this selection of cereals as well as grasses, tubers and roots, reaching 90/100kg at the beginning of October (when the montanera begins), the moment when the acorns fall and which they feed on exclusively until they reach an approximate weight of 180kg in their adult stage.

These pieces, due to the 100% Iberian breed that characterizes them and their exquisite diet, have an elongated and stylized shank with a golden and fluid fat on the outside.

While its internal part shows a pink and melting appearance that floods the mouth with intense and prolonged nuances.
