Acme's Atlantic Nova Salmon is a farm-raised, Norwegian salmon. Known as Nova, Nova Salmon, Eastern and Gaspe, these are our most popular smoked fish varieties. Acme cures the salmon in a mild salt and brown sugar brine for up to one full week before cold smoking it (not cooking), over a blend of fruitwoods for up to 24 hours. The result is a mildly smoky and slightly salty flavor and a silky texture that practically melts in your mouth. Acme Smoked Salmon is available in a wide range of sizes and packages including whole or trimmed sides, pre-sliced sides, exact weight vacuum-sealed packages and even in snack-sized pieces or ground.
