Baby Artichokes Hearts

Baby artichokes or carciofini, are harvested twice a year in Italy. These artichokes are picked in the spring and fall. Once the artichoke starts to bud they are watched very closely to ensure that the harvest is optimal. Baby artichoke hearts can be a great compliment to antipasto, salads, risottos or lightly seared to add a delicate crunch to their tender leaves.
