Parmigiano Reggiano 24mo 1/4

Parmigiano-Reggiano is a hard, granular cheese made in and around the city of Parma in the Emilia-Romagna region of Italy. Informally known as the "King of Cheese", it is made from a process that involves cooking raw, grass-fed cow's milk and shaping the cheese in a large stainless steel round. After it is officially stamped as Parmigiano-Reggiano and is brined, the cheese is rotated and aged for at least 12 months.

The cheese is officially trademarked and falls under control of the European Union as a protected designation of origin. True DOP Parmigiano-Reggiano can always be identified by the unique stamps on its rind.

Parmigiano-Reggiano is one of the world's best grating cheeses. It is commonly shaved on pasta dishes, stirred into soups and risottos, or is great on its own. In Italy, the hollowed-out rind of a whole Parmigiano wheel is often used as a serving pot for a large group of diners.
