Thistle Hill is a private label imported from the Ford Farm in Dorset, England. Ford Farm's traditional cheeses are made entirely in line with traditions and many old timers are surprised to see them using techniques they thought were secrets known only on their farm! In acknowledgment of this, their traditional cheeses have been awarded the Protected Designation of Origin accolade by the UK's Department for Environment, Food and Rural Affairs (DEFRA).

Sage Derby is a hard, cow's milk cheese flavored with sage leaves. For obvious reasons, this cheese is a favorite for St. Patrick's Day celebrations.
