Taleggio
The Arrigoni cheese factory collects milk daily from more than 20 selected stables. It is then transformed by cheesemakers who use ancient secrets and traditional methods to create their world-renowned cheeses.
Since 1988, Taleggio has been a cheese of Denomination of Origin within Italy, and it obtained the European acknowledgement of Denomination of Protected Origin in 1996. Its origins date back to the 10th and 11th Centuries, but today, its production and commercialization are controlled and guaranteed by the Association for the Protection of Taleggio Cheese.
Taleggio is a soft-paste cheese produced exclusively with Arrigoni's cow milk. It has a rosy rind that is soft and thin with a pasty interior that melts on the palate. Its sweet taste is delicate with aromatic shadings, and once maturation is reached, the flavor profile gets decidedly spicier.
