Valdeon
Valdeon DOP 6lb
Valdeon Picon is a Spanish blue cheese often confused with the wider-known Cabrales blue because of their similarities: both are blues, both are aged in caves, and both are traditionally wrapped in sycamore leaves. Though Valdeon Picon is less intense than Cabrales, it is by no means mild, and its peppery bite pairs well with the complex flavor provided by the sycamore leaves.
Valdeon, a more intense blue in color than the grayish Cabrales, is from the northern regions of Spain. Produced in the Picos de Europa mountains areas outside of Leon, it is a blend of cow's and goat's milk that becomes semi-soft during aging, making it a great cheese for crumbling.
Try it the Spanish way, with crusty bread and a glass of fine sherry.
